Delfin Lasso, the owner of Finca El Diviso, has been a coffee producer for over 48 years. Operating the farm is a family affair. Defin’s wife Estela and their two sons, Wilder and Heiner, all play pivotal roles. This lot is composed entirely of the Papayo variety; a long bean Bourbon-related variety that was recently identified and isolated. Initially, interest in cultivating Papayo was due to its disease resistance. Wilder, who was looking for potential varieties to plant on the farm, selected some samples and took them to the cupping lab. He discovered that, in addition to its excellent agronomic characteristics, Papayo also had a different cup profile with many beautiful aromatic notes. This special lot, produced using an anaerobic natural processing method, produces a vivid cup with notes of apricot preserves, brown sugar, golden raisin, and bergamot.
