Hacienda Sonora is a farm located in the Central Valley of Costa Rica, at the foot of the beautiful Poas Volcano. The farm's area is approximately 100 hectares, including 65 of shaded coffee, 25 of wild forest reserve, and 10 hectares of sugarcane. The average altitude is 1,200 meters above sea level.
This coffee is 100% naturally (dry) processed and is comprised of the dwarf caturra varietal known as venecia. Venecia was developed via natural selection in the area of "Venecia de San Carlos". This plants fruit takes longer to ripen, which helps to create very high brix content. It is sun dried for 14-18 days before finishing in a drum dryer for about three hours. This creates even better uniformity in the cup.
