Roast Levels Explained
 

A general rule of thumb is: the lighter the roast, the more caffeine you retain. Roasting darker essentially burns off more caffeine.

 

 

Full City Roast This is our lightest roast. It is dark enough to begin to caramelize sugars and awaken the acidity and flavors previously trapped in the hard membranes of the coffee beans. This roast level has a caramel color with little or no oil on the surface of the beans.

 

 

Signature Roast Our signature touch. This roast level lets us showcase the talents of our roasters. The coffee has been roasted to achieve a perfect balance of sweetness, acidity and body. The beans are reddish-brown in color with a slight touch of oil on the surface.

 

 

Italian Roast Our medium roast level. The sugars have been fully caramelized at this roast level. Acidity has decreased while body is maximized. Italian roasted coffee has a dark brown color and a light layer of oil on the beans.

 

 

French Roast Our darkest roast level. Sugars are beginning to carbonize at this roast level revealing a bittersweet quality and smoky aroma. French roasted coffee is very dark brown in color with oil coating the surface of the beans.
